Robbie’s Peach Cake Recipe

Recipe-BigA wonderful summer treat, this peach cake will leave you feeling warm and fuzzy.

Cake:

  • 4 tablespoons butter
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 cup all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup of milk
  • 3 ripe peaches, sliced

Preheat oven to 350 degrees. Grease the bottom of a 9″ dish. Cream the butter and sugar until light. Beat in the egg. Sift all dry ingredients together. Beat half of the sifted dry ingredients into the creamed mixture. Beat in half of the milk. Repeat, beating well. Pour the batter into prepared dish. Arrange the peach slices on top of the batter. Bake for 25 minutes.

Topping:

  • 1/2 cup granulated sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 4 tablespoons butter

While the cake is baking, cut the topping ingredients together in a small bowl with a fork. After the cake is done, crumble the topping over the peaches. Bake for another 8 minutes. Serve warm with french vanilla ice cream or your favorite whipped cream topping. Serves 8
